Ingredients
    Vegan Jollof Rice
  • 2 cups Washed parboiled rice
  • 1 cup Tomato paste
  • 1/4 cup Vegetable Oil
  • 1/2 cup Sliced onions
  • 2 cups Vegetable broth
  • 1 Bay Leaf
  • 2 Vegan bouillon
  • 1 Salt to taste
  • Pepper mix consisting of:
  • 1 Onion, chopped
  • 2 Sweet long peppers, chopped
  • 2 Hot peppers (atarodo), chopped
Instructions
  1. Heat vegetable oil in a large pot over medium heat.
  2. Add sliced onions and cook until translucent.
  3. Stir in the chopped onion, sweet long peppers, and hot peppers. Cook for about 5 minutes until softened.
  4. Add the tomato paste and cook, stirring frequently, for another 5 minutes until the tomato paste darkens slightly.
  5. Pour in the vegetable broth and add the bay leaf and vegan bouillon cubes. Stir well to combine.
  6. Bring the mixture to a gentle boil, then reduce the heat to low.
  7. Add the washed parboiled rice to the pot, stirring to coat the rice evenly with the sauce.
  8. Cover the pot with a lid and let the rice simmer for about 20-25 minutes, or until the rice is tender and cooked through, stirring occasionally to prevent sticking.
  9. Once the rice is cooked, fluff it with a fork and serve hot.
