Vegan Egusi Soup

Heat palm oil in a pot over medium heat.

Add the pepper mix and sauté for about 5 minutes until softened.

Stir in the ground melon seeds (egusi) and cook for another 5 minutes, stirring constantly.

Add the soaked and sliced dried mushrooms to the pot and cook for 5 minutes.

Pour in the vegetable broth and bring to a simmer.

Add soy sauce, smoked paprika, garlic powder, and salt to the pot. Stir well to combine.

Allow the soup to simmer for 30-40 minutes, stirring occasionally.

Add the chopped spinach to the pot and cook for an additional 10 minutes until wilted.
