  1. Heat the vegetable oil in a large pot over medium heat.
  2. Add the sliced onions and sauté until translucent.
  3. Stir in the pepper mix and cook for about 5 minutes until softened.
  4. Add the tomato paste, paprika, garlic powder, onion powder, thyme, and salt. Stir well to combine.
  5. Cook for another 5 minutes, allowing the flavors to meld together.
  6. Add the washed parboiled rice to the pot and stir to coat evenly with the sauce.
  7. Pour in the chicken stock water and add the bay leaf. Stir gently to combine.
  8. Cover the pot and let the rice simmer over low heat for about 20-25 minutes, or until the rice is tender and the liquid is absorbed, stirring occasionally.
  9. Once the rice is cooked, fluff it with a fork and remove the bay leaf.
  10. Serve hot, optionally topped with grilled or baked chicken breast for added protein.
