Step by Step process on how to make egusi

Ingredients
  • 1 cup Pepper mix consisting of hot peppers, long sweet peppers, and onions
  • 1/2 cup Palm Oil
  • 1/4 cup Crayfish
  • 1/2 cup Egusi ((ground melon seeds))
  • 1/2 cup Dried smoked fish, flaked
  • 2 cups Spinach, chopped
  • 3 cups Beef stock
  • 1/2 kilogram Beef, cut into bite-sized pieces
  • 2 Maggi
Instructions
  1. eat palm oil in a large pot over medium heat. (2 minutes)
  2. Add the pepper mix and sauté for about 5 minutes until fragrant. (5 minutes)
  3. Stir in the egusi and crayfish, and cook for another 5 minutes, stirring constantly to prevent burning. (5 minutes)
  4. Pour in the beef stock and bring to a gentle boil. (5 minutes)
  5. Add the beef pieces and maggi cubes. Reduce the heat to low, cover the pot, and let it simmer for about 30 minutes or until the beef is tender. (30 minutes)
  6. Once the beef is cooked, add the dried smoked fish and simmer for an additional 10 minutes. (10 minutes)
  7. Finally, add the chopped spinach and cook for another 5 minutes until wilted. (5 minutes)
  8. Adjust seasoning if necessary and serve hot with your favorite side dish, such as pounded yam or rice. (1-2 minutes)
