Dietary Ofe Nsala with Substitutions

  1. In a large pot, combine the low-sodium vegetable broth and water. Add the diced yam to the pot and bring to a boil. Cook for about 15-20 minutes until the yam is soft.
  2. Remove the cooked yam from the pot and set aside. Allow it to cool slightly, then grind or mash it until smooth, or omit for a lower-carb option.
  3. Return the grinded yam to the pot and stir to combine with the broth.
  4. Add the pepper mix to the pot and simmer for another 10 minutes.
  5. Stir in the sliced mushrooms (substitute for dried smoked fish), chopped utazi leaves, peppersoup spice, and vegan bouillon cubes. Stir well to combine.
  6. Simmer for an additional 10-15 minutes, allowing the flavors to meld together.
  7. Taste and adjust seasoning with salt if necessary.

Substitutions

  1. Sliced mushrooms are used as a substitute for dried smoked fish to reduce sodium and animal fat content.
  2. Omitting grinded yam and soaked cashews provides a lower-carb and lower-fat option, respectively.
