Ingredients
  • 2 cups Spinach, chopped
  • 1 cup Chopped kale
  • 1 cup Chopped red bell pepper
  • 1 cup Chopped Tomatoes
  • 1/4 cup Palm oil
  • 1/4 cup Ground crayfish ((optional, for flavor))
  • 1/4 cup Chopped mushrooms ((optional, for texture))
  • 1/4 cup chopped bell peppers ((optional, for extra flavor))
  • 2 tablespoons Tomato paste
  • 2 teaspoons Paprika
  • 2 teaspoons Garlic powder
  • 2 teaspoons Onion powder
  • 1 teaspoon cayenne pepper ((adjust to taste))
  • 1 teaspoon Salt to taste
  • Optional
  • Grilled or baked chicken breast or tofu for added protein
  • 3 bullion cubes
Instructions
  1. Heat the palm oil in a large pot over medium heat.
  2. Add the chopped red bell pepper, tomatoes, mushrooms, and bell peppers. Cook for about 5-7 minutes until the vegetables are softened.
  3. Add the tomato paste, paprika, garlic powder, onion powder, cayenne pepper, bullion cubes and salt. Stir well to combine.
  4. Cook for another 5 minutes, allowing the flavors to meld together.
  5. Add the chopped spinach and kale to the pot. Stir well to combine.
  6. Cover the pot and let the mixture simmer for about 10-15 minutes, stirring occasionally, until the vegetables are tender.
  7. Taste and adjust seasoning if necessary.
  8. Serve hot over cooked rice or your preferred side dish.
